1. Huevos a La Cantina

Add tomatoes and mushrooms on top of batter poured into hot vegetable oil in a large sauté pan, wth lid. Flip the crepe when the top dries, and lay spinach, goat chevre, and kalamata olives across crepe. Cover and heat; crepe will be cooked, and chevre will be soft.
