Cowgirls' Red Beet Stew

Steam 3 medium julienne-cut beets, 20 minutes. Add 1 medium diced red potato (with skin), plus 2 medium coin-sliced carrots; steam for 20 more minutes. In 2 tablespoons grapeseed and sesame seed oil, sauté 1 medium diced red onion, 1 medium diced green jalapeño, 1/2 teaspoon diced fresh ginger. Cover and simmer until onions are soft. Add sautéed vegetables to steamed vegetables, plus liquid from steamer. Add salt to taste. Simmer 10 minutes. Serve hot with a dollop of cold goat yogurt.
