Sweet and Savory GF Pan-Bread Sandwich-Wrap

WRAP BATTER
Heat oil in a 10" sauté pan.
sauté onion.
Pour batter over sautéed onion.
Cover and cook until batter is no longer glistening on top and edges are crispy.
Flip wrap over.
Arrange chevre chunks and chopped spinach across wrap.
Cover and cook until batter is crisp outside but soft and moist inside, spinach is lightly steamed, and the chevre has gently melted.
Roll filled wrap out of sauté pan onto plate.
Garnish with preserves and mustard.

- GF baking mix
- 1 egg
- 2-3 ounces coconut milk
- 1 teaspoon vanilla extract
- 1 teaspoon oregano
- 1 teaspoon parsley
- 1/4 teaspoon salt
- oil
- 1/2 medium-sized red onion
- 1/2 cup chopped spinach
- 1 Tablespoon goat chevre
- 1 Tablespoon cherry preserves
- 1 teaspoon GF mustard
