GF Polenta Dumpling Soup

Sauté 1 large onion & 1 jalapeño.
Add 1/2 a box (or 1 can), gf vegetarian broth.
Add 1 can Rotel.
Add 1 tablespoon lemon juice.
Bring to boil.
Add 2 servings of cold polenta, cubed.
Boil about 5 minutes.
Divide into 3 serving bowls.
Add a heaping tablespoon of frozen corn.
Stir and serve, or refrigerate for a cold lunch or starter.


The soup in a large sauté pan, before adding frozen corn to individual serving bowls.
2 servings of polenta, chilled in a 5"x7" dish.
I used 1 can of Rotel.
