Quesadillas
Making 'kay sawzzz' in the breakfast nook:
- For one quesa, use 2 corn tortillas. Spread each with bean paste (I used hummus on these) and slices of chipotle cheddar.
- For filling, cook diced onions, jalapenos, tomatoes, fan leaves, and spinach in hot oil in a small sauce pan. Add scrambled egg. Cook together until egg is set.
Serve hot, with plain goat yogurt.
