Cheesy Pasta With Veggies


Served in 6-cup Pyrex bowl.

  1. Oven-roast veggies:
    • onions
    • hot green peppers
    • red bell peppers

  2. Bring to boil:
    • 12.5 ounces of water
    • 1 tablespoon of peanut oil
    • 2 teaspoons of crushed red pepper

  3. Add 5 ounces of Tinkyada's brown rice spirals.
    • Cover and simmer 5-7 minutes.
    • Remove from heat and let stand covered for 5-7 more minutes.

  4. Chop up 3 slices of Chao vegan cheese alternative.

  5. Add chopped Chao slices and ~1\3 cup of Mateo's Gourmet Salsa to pasta.
    • Cover & simmer on lowest heat for ~1 minute.

  6. Remove veggies from toaster oven.
    • Fold hot veggies into cheesy pasta.
