Week 2, Dish 3: Ratatouille Verde
with Basil Gremolata and Polenta


The gremolata garnish adds a very nice tang to the ratatoille and polenta.


The next morning, the remaining serving was an easy brunch of chilled veggie polenta, with pecans and pumpkin seeds.
